Biquinho Pepper
Biquinho means “little beak” in Portuguese, but it also means “pout”—which is not something you will do when enjoying these delectable little treats. Typically prepared by pickling in a sweet and salty brine and often enjoyed as appetizers at a bar, these peppers possess a highly fruity flavor that shines against (or through) accompanying dishes. Excellent as pizza toppers, with fresh bread, and as part of a Brazilian-inspired mezzo plate. Maturity is late in the season and comes in a big wave; pickling not only accentuates their flavor but helps to quickly process the bounty when it comes.
